Hello everyone!
Well, I had an interesting day. I woke up not feeling very well and decided to call in sick. But I couldn't figure out who to call and my daughter just keep waiting for me to take her to school and my kids just kept looking at me like they were hungry or something... So I went ahead and went in to work.
My Mom came out and spent some time teaching the girls. We made a fire in the fireplace. I dyed my Mom's hair again. Then we went to a wedding. This sweet couple from our church had actually already been married ten years. But they had never really had a wedding. So they went all out, had a wedding and renewed their vows. They hired my friend Marlene to cater it. She made all this Mexican food, home-made salsa, chips, tortillas, shredded beef, re fried beans, Mexican rice, queso. Yum! It was really great.
Speaking of my friend Marlene, would you please pray for her and her children? Without going into details I will just say that she is having an incredibly hard time right now and needs a miracle or two in her life. So please, take a minute when she comes to your mind and say a prayer for her. Thanks!
Now I will tell you about crock pot chicken. This is a very delicious meal but what I like most about it is how EASY it is. Not to mention, your house will smell great all day. So you just put chicken in the crock pot. I usually put in a whole chicken with the skin on. Then you can cut up some potatoes or carrots or both and put them in too. You do not need to put in any water. Seriously, no water. Then just add your favorite spices. I usually smother it in seasoning salt, lemon pepper, oregano, basil. Sometimes I just put a chunk of onion in there to add flavor. Then just let it cook in the crock pot for a few hours and viola, a great meal! The chicken turns out very juicy and the potatoes are very flavorful.
